(salmon can be swapped out for chicken if you're a non fish eater, Tempeh/Tofu perhaps for vegetarian)

Paul has 20 years chef experience, from Michelin star restaurants to bistros, latterly as a Chef Patron of 3 restaurants. In the last 5 years Paul has specialised in training Chefs as they are about to embark on their Chef careers. Paul is passionate about food origin; organic, seasonal and local where possible.

Herb Crusted Salmon, celeriac parsnip puree, sauteed greens & honey mustard dressing.

Here are the ingredients (serves 2)
2 x skinless 150g supremes or fillets of salmon
1 x large parsnip
1/4 of large celeriac
125ml full fat milk
4 large kale leaves
100g french/green beans
4 spring onions
2 tbsp gluten free porridge oats
3 tbsp flat leaf parsley
1 tsp dijon mustard
1 tsp honey
2 tsp extra virgin olive oil
Juice & zest of 1/2 lemon
Salt and pepper for seasoning!
